Someone told me that they make an Indian dish with 18 different spices. Although I regularly flavour meals with herbs and spices and I love to experiment, I genuinely think I could not name 18 spices. I tend to use the same ones that I know and never really venture out. HOw many spices could you name and do you use them regularly?

Yes, I can name 18 spices, but I use about 6 to 8 on a consistent basis. There is a farmer's market near me that sells herbs and spice by the bulk. If I need something that I don't normally use, I can just buy a small amount.

I have recently started cooking a few Indian dishes. I bought some packages meals and it's just cheaper for me to recreate the dish from scratch.

I think I could name some but I don't know if I could do 18 either. I think I probably use 10-12 at most in my everyday normal cooking.
