Jamaican Christmas Cake recipe

    As Christmas Eve is about to come and it just could not be the same without a good yummy Christmas cake. It does not matter what part of the world you may be in, everyone has carved their own different way of celebration of this wonderful Christmas evening. The Christmas cake tradition is well-known in Jamaica. For the past years, each and every family bakes the Christmas cake during this festival season. They usually bake dark and fluffy cake with fruits soaked in wine or rum. It is made only on Christmas Eve and is considered as a good luck gift to a Jamaican Christmas cake to someone.
    This cake is very simple as well as trouble-free to get ready and the ingredients may be altered depending on the thing, what is more simply accessible.

    Ingredients


    • 2 cups of butter
    • 2 cups of white sugar
    • 9 eggs
    • ¼ cup of white rum
    • 1 tbsp of lime juice
    • 1 tsp of vanilla extract
    • 1 tbsp of almond extract
    • 2 pounds of chopped dried mixed fruit
    • 2 cups of red wine
    • 1 cup of dark molasses
    • 2 ½ cups of flour
    • 3 tsp of baking powder
    • ½ tsp of nutmeg
    • ½ tsp of allspice
    • ½ tsp of cinnamon
    • Zest of 1 lime, grated
    • 1 pinch salt

    Steps to follow


    Step1: preheat oven at 350 degree Fahrenheit.

    Step2: take 2-9 inch of round cake pans and then flour it. After that grease it.

    Step3: take a bowl and mix together butter and sugar until it is light and fluffy. Now put eggs and beat them properly.

    Step4: add rum, lime juice, almond extract, vanilla and zest of lime. Stir it properly and simultaneously add wine, molasses and fruits.

    Step5: now add the flour, nutmeg, baking powder, cinnamon, allspice and salt and stir it continuously.

    Step6: now pour the prepared batter into the greased tins.

    Step7: bake them in the oven for around 90 min or until when the inserted knife comes out clean from it.

    Step8: take them out and let it cool completely.

    Do all the decorations as per your choice once they cool down and then enjoy them with your friends and family.
