Banana Sauce

    Banana sauce goes really well with things like dry crackers or ice cream and it tastes better than it looks so why not try it the next time you have friends round.

    Banana Sauce (serves 8 )

    2oz of firm ripe banana's
    1/2 pint of soya milk
    2 tablesooons of lime juice
    2 tablespoons of cornflour
    2 tablespoons of honey
    A pinch of nutmeg

    Peel and slice the banana's, place the slices in a saucepan with the milk and lime juice. Bring to the boil and simmer for 2 minutes then mix the cornflour with a little cold water in a small bowl and add the cornflour to the banana mixture while stirring with a wooden spoon. Remove from the heat and stir in the honey and nutmeg. Return to the heat while stirring and simmer for another 3 minutes, liquidise then leave to cool.
