The coconut oil helps to make it crunchy. You can use whatever oil you want to use to help make it crunchy and it's not much; maybe a tablespoon for a big batch. I just prefer coconut oil for its health benefits. Plus, it's local and cheap. I guess you could leave the oil out all together if you would like. I have never tried it this way. So, I am not sure if it would make a difference. I like making homemade granola cereal because I can control what's put into it and of course, as mentioned before, it is a lot cheaper.
OK, I think I got it, so it will not taste like coconut at all, it's just a matter of making it crunchier. To be honest I thought that the honey would to the trick, but I guess that it's necessary some kind of oil to combine it all together right?
Play around with it. I don't use an oil at all. I use juice from an orange, maybe some maple syrup.. honey.. whatever you want. If you do end up using coconut oil, the virgin smells and tastes of coconut, the refined does not. Like I said though, I don't use it, so I don't know if it matters in the end result as it does with most other things you use it in.
Mnham mnham, so now you are making me eager to try it right now, I love orange juice, so I would prefer that over coconut oil, but pretty much like you say, I am going to make an experiment with small amounts, honey and orange juice are on the top of my list to start with.
