Another healthy dish and cheap too. The ingredients are 1 piece of banana blossom, 1 pint of coconut milk, 2 onions, half clove of garlic, 1 tablespoon of shrimp paste, 100 grams of pork (you can exclude pork if you are on a vegetarian diet).

Remove the other cover of the blossom until the leaf is soft to the touch. Slice it in ½ inch thickness. Soak in salted water for 1 hour before using. Sautee the crushed garlic and sliced onion. Add the shrimp paste to the pan together with the coconut milk. Boil for 5 minutes before adding the sliced blossom. Let it boil for 5 minutes before turning off the fire. That’s ready to eat.

Notes: 1) If you eat pork, slice in cubes or strips. Add to the pan after the sautee of garlic and onions. Let it fry for 5 minutes before adding the shrimp paste and coconut milk. 2) Fish sauce can be a substitute for shrimp paste.

Most people here are from the US. Banana blossom is very expensive in the US and UK because people can only find them at Asian stores. The cheapest replacement for Banana blossom westerners can get is the artichoke because they have the same texture.
