This recipe is inherited from my Spanish ancestors. It is my favorite rice dish during occasions. The ingredients are 4 cups of leftover rice, a clove of garlic, 1 onion, 2 eggs, 2 Chinese sausages, soy sauce and cooking oil.

Peel and crush the garlic and slice the onion. Cut the sausages in small size, circular or strips. Mash the rice a bit so it will not stick anymore. Beat the egg and fry to scrambled. Cut into little squares and set aside.

Fry the garlic until brown before adding the onion. When the onion is wilted, add the rice. Stir continuously for 1 minute then add the soy sauce. Stir again until the rice turns brown. Add the Chinese sausage. After 1 minute of stirring, add the scrambled egg. Stir slowly for 1 minute before turning off the fire. It is a complete meal in itself.
