Christine’s lemon wreath cookies recipe

    At the time of Christmas, Italians make the lemon flavored cookies which looks like ring, they call it CIAMDELLE (in Italian), it is the most famous cookies there.

    INGREDIENTS


    TO MAKE THE COOKIES
    • 4 (200 ml) cups of flour (all-purpose), in that 1 cup is to make the surface
    • 1 medium sized table-spoon of baking powder
    • 1 1/4 medium sized teaspoons of salt (coarse)
    • 2/3 (200 ml) cup of sugar (granulated)
    • 11/2 (medium sized) tablespoon of lemon (finely, grated zest)
    • 8 ounces of butter (unsalted, in room temperature)
    • 3 full eggs
    • 1 (medium sized) teaspoon of vanilla ( pure extract)
    • 1 ( medium sized) teaspoon of lemon (fresh juice)

    TO MAKE GLAZE

    • 3 (200 ml) cups of sugar (confectioners')
    • 8 (medium sized) tablespoons lemon (fresh juice taken from 4 lemons)
    • ¼ (200 ml) cup + 2 (medium sized) tablespoons of non-pareils (white), for sprinkling

    DIRECTIONS


    • First pre-heat the oven to 3500 F degree’s. In a bowl, take (flour, baking powder, and salt) along with (sugar and zest along with butter) and beat them together it until mixed up well or until the mixture color turns pale and becomes fluffy.
    • Add 3 eggs, one after the other, and beat it nicely.
    • Now add vanilla along with lemon juice. Minimize the speed. And slowly add flour mixture, and beat it till it gets nicely mixed up.
    • Make one place free and flour it, and over it with the ice-cream scoop take dough and arrange it.
    • Roll the dough as a (4-inch thick) rope, by bringing together the two ends and make a ring shape. Make more rings with the balance dough. Transfer the rings one after the other on a baking sheets, leaving gap on all sides.
    • Bake it until the color turns pale golden at bottom part and on edges. Transfer it to the racks, and allow it cool.


    How to prepare glaze:

    In a small bowl take sugar along with lemon juice and beat it until becomes smooth. Dip one by one cookie into glaze and arrange the cookies on racks, glaze side facing upwards, and over it sprinkle non-pareils. Allow it to dry fully.
