Excess Vegetables From The Garden

    What do you do with the excess vegetables from your garden? For the red pepper, we fry it to serve as chili sauce. Extra tomatoes can be preserved. And for the greens like lettuce, we make it into a healthy omelet. You can be creative with your garden harvests so you don't throw away the excess harvest.

    We have kalamansi, jackfruit, and guava over here and we just give them away to relatives and neighbors. Sometimes we do eat them, but to prevent them from spoiling and going to waste then we give them to other people, even to the neighbors.

    There are so many things you can do with excess vegetables. Some of them can be pickled in jars. Pickles can last a long time and you can use them for many dishes. Leafy vegetables can be frozen. Yup you can freeze them in the freezer and cook them when you need to. If you have an an oven or a dehydrator, You can make chips out of the vegetables by slicing them thinly then dehydrating them or baking them.

    Like moneymania my relatives gave their produce and fruit away every year. My Aunt had a avocado pear tree which gave butter avocado, so it was so delicious. We waited every year for it. But she passed and the new relatives that live in her home cut down the avocado tree down, boo hoo! My Uncle now passed too had a little bit of land so he grew vegetables and had fruit trees. He gave them away to the family every year come harvest time after they took their share of the harvest. We waited for this too every year too. There is nothing like eating fresh from the garden fruits and vegetables!

    The fact vegetable leaves cannot be preserved for a reasonable length of time. What we do in a case of excess vegetables is sell off the remaining after removing the amount we can consume while still fresh. For Pepper we get them dried up to reduce their water content. This way they can be stored in dry environment for a longer time. The fruits can be put in the fridge to last for sometime.
