My understanding was that bok choy was supposed to be a hardy plant that could survive well into the early winter months. But mine started wilting at first frost and has died since then. Is there something special I need to do for it next year to ensure that it doesn't happen again? Should I use something to protect it from the frost?

Bok Choy grows well in tropical climates. I have never attempted to grow bok choy in temperate or even cold climates, but I believe that with the right care you can almost grow anything anywhere. I would suggest that you grow bok choy and similar Asian vegetables during the warmest months of the year in your region, and that you protect it from sudden extreme cold spells and frost.
