Tuna & Artichoke Pizza

    Okay, so I need to work on that title to make it sound a little more appetizing, but this was really good, trust me, lol.

    I came across a recipe recently for a chilled salad made with canned artichokes, some tuna fish, black olives, mayo, and a little bit of oregano and lemon juice. You just chop, drain, and mix everything to taste and let it all chill for a few hours for the flavors to meld together. It would also come in Handy for people eating low carb, using the artichoke in place of perhaps "pasta" in a pasta salad.

    We had some Ciabatta bread on hand from yesterday, and being as I was completely sick of ham today (after gorging on it all day yesterday), I figured I may try to make some "pizza's" with the tuna & artichoke salad. I just added the salad to the ciabatta bread, topped with a shredded Italian blend, and baked in the oven until heated through, toasty and golden. These came out fantastic and were very filling.

    You can obviously leave out the tuna if you are vegetarian.
