I really hate wasting produce. One of the big issues for me is that I will often only be able to get through half of what I buy before it starts to look sketchy. This is a common problem for those who cook for one or two and are forced to buy an entire head of lettuce etc. While I prefer the taste and texture of fresh vegetables, one way I reduce waste is to wash and dice the surplus produce I buy. As long as it is dry before it is frozen and stored properly, it can still be used in a soup or added to something that is being cooked like pasta sauce. As long as I make a point of using it and have the freezer space, it saves me money in the long run. Another benefit is that some seasonal fruits can be bought in bulk, prepped and frozen for making smoothies. This can save a good amount of money in the long run. Have you any tips for utilizing produce before it turns to compost in the fridge?
